I opened up IncrediMail yesterday and ALL my folders were gone. So, I'm starting over.
Does anyone know how this happened? Is there a way to prevent it from happening.

I'm very surprised by what you say...
I don't remember such a thing ever happening to my knowledge !
Before starting all over again, try to restore the system to a date prior to the problem, it should restore your folders

when and if it happens, you can all have back fast and easy
Now it's difficult to know why it happened, it happened to me some times with sounds and animations but not stats. The solution given in the link saved me several times and also when changing computer. Better than to re-do everything
